Our Insiders' Article

Intro

One morning, upon waking up, an idea struck Julien Cohen: give a new upgraded and trendy image to the classic pizzeria and avoid the cliché décor that usually is associated with this type of Italian food. After all, he already owned 6 other restaurants, so why not start kneading dough? After a period of learning, he got his special dough ready and dove head first in this new adventure. Working exclusively with ultra-fresh products, what could be experienced as an over-priced pizza has since conquered the taste buds of many Parisians.

Food

Pizzas are undeniably the restaurant’s specialty, but there are many other dishes on the menu, such as antipasti (starters), with a special recommendation for the octopus Carpaccio. The same quest for excellence is sought for each plate. As for the pizza, the secret lies in the fact that the dough is prepared 5 days before it is baked. Most of the ingredients are then added after the pizza is cooked. This enables each ingredient to keep its original flavor. Using mostly green bio products and “slow food”, the choice of the suppliers is therefore a challenge and a priority. All the products come from Italy, and the Pizza Chic team has visited most of the local producers.

Parisianist Fun Fact: It took Julien Cohen a number of years before sourcing the perfect olive oil.

Drinks

The wine menu, developed by a wine specialist who has collaborated with Julien Cohen in the past, is extensive. Prices go from €23 to €769 for a bottle, so the least we can say is that there is a lot of choice! With a selection of famous wines as well as smaller lesser known organic ones, the wine list has been developed to cater to both the wine connoisseur as well as the occasional amateur.

Ambiance

Before the arrival of Pizza Chic, the premises were occupied by a gloomy French traditional restaurant. The dark restaurant was transformed into a world of light and today, a wide plate glass window as well as many decorative lamps give life to the pizzeria. With clients mostly coming from the neighborhood, and therefore quite demanding, the service has to be friendly and efficient.

Parisianist Fun Fact: You want to know more about the products and ingredients? Just ask the waiter as they know everything there is to know about the origin of what is in your plate.

Conclusion

Unless you feel like privatizing the whole restaurant, coming in with a group of friends is not the best, because the restaurant is quite small and not really suitable for a big event. Pizza Chic is more adapted for smaller groups, be it a family or a couple. After having walked for hours discovering the secrets of Saint Germain, it’s hard to resist eating a great tasting pizza at the end of the day!
