Chef Antonin Bonnet is one of the best, the self proclaimed “Master Yoda” of cooking. Formerly of Provence’s La Baumanière and Mayfair’s The Greenhouse, Bonnet had never planned to settle in Paris. A chance meeting and this exciting project turned his head and he finally discovered his long lost paradise. The customer is no longer king at the Sergent. Instead, Bonnet, a sovereign of flavour compels his subjects to eat what he chooses, only for them to better rediscover their emotions.

Parisianist Fun Fact: the chef’s dream of having his own organic vegetable garden will become reality in 2015 and will include over 300 tomato varieties. 


Completely remodelled into an elegant restaurant, this former tavern is no longer recognisable. Pints and pork scratchings have been replaced with lime marinated mackerel and Limousine veal sweetbreads in milk.  Fine dining has been taken back to basics to reveal the glorious simplicity of the in-season menu. Beautiful presentation is topped only by the pure, intense flavours of each dish. In a restaurant where taste is paramount, the meat is carefully selected and the fish is caught in the Loire River. The impressive wine list is fairly priced and you are sure to find the perfect accompaniment for your meal. 


Once a dark, gloomy building, the tavern has been transformed into a Michelin star restaurant. You almost feel part of the kitchen in this intimate atmosphere. Here at the Sergent you are not a customer, you are a guest. And that makes all the difference.

Parisianist Fun Fact: A new chapter of history is being written in this time-honoured building. Formerly a last galvanising stop for Napoleon’s soldiers before battle, and the first halt upon a triumphal return where the men would relish a true Gallic feast. Presently, the place is a mythical medieval fantasy that is not to be missed. 


The choice is not an easy one between the exquisite snack bar at the entrance serving substantial food from around the world; the modern-medieval dining room offering a view into the chef’s kitchen; and the private basement room providing fine dining in an exceptional setting. Award winning designer Jaime Hayon crafted the medieval gothic setting by playing with the lighting, layout and visible stonework as well as juxtaposing apparently contradictory elements to create a union of opposites. There are modern touches in the ancient stonewalls where Aubusson tapestries, woven in Amsterdam’s textile museum, sit alongside contemporary spotlighting. A mysterious new world just waiting to be discovered!  


The Sergent Recruteur offers designer cuisine, avant-garde from the décor to the dishes. It is a faultless, sophisticated symphony showcasing carefully selected ingredients from the best producers.
