Our Insiders' Article

Hidden away in the 9th Arrondissement, this cozy, delightful and remarkable restaurant is a temple of food and wine satisfies your every expectation and desire. Originally an organic wine cellar, the owner quickly branched out to open a restaurant at the same address where the organic and natural wines beautifully complement the blend of French and Japanese cuisines with delicious results. The Caviste Bio is a most unique concept that absolutely should not be missed.

The greats of this world have long turned to the land of the rising sun in search of inspiration. Monet and Van Gogh revered the detail of Japanese engravings, while Dominique Bry, owner of the Caviste Bio, venerates Japanese cuisine. By inviting eminent chef Junko Kawasaki into the fold, a wonderfully unique combination of flavors and continents was born. The prices are very reasonable, given the quality of the produce, 80% of which is organic. Marry your Harumaki scallops with a fantastic organic wine, or even a natural wine before finishing off the meal with a Matcha green tea crème brulée.

The Caviste Bio welcomes you in to an intimate atmosphere in a restaurant that seats only 25 customers. Your every need is taken care of, with staff ready to advise, discuss and share their knowledge. They aspire to make each customer feel great, and they pull it off. Whether in the restaurant or on the patio, you will be able to relax as you savor the fine food and wine. You feel almost as though you’re at home, but it‘s even better.

The room is small, but well laid out. Rather than being cramped and uncomfortable, it is charmingly cozy. The outside of the restaurant is uncluttered, and decorated in red and black, evoking Stendhal’s famous historical psychological novel. Unlike the food, the décor shows no oriental influence, simply a classic, discrete charm incorporating old stone walls, wood tables, a few cushions and chandeliers. But the principal decoration is a mountain of wine bottles carefully selected by the owner’s educated palate.

It is mainly regular customers that frequent the restaurant. Many Japanese people, won over by the subtle blend of cuisines and cultures, can also be seen here. However, customers for the organic wine bar are rather hard to find – wine connoisseurs are wary of the bad reputation of organic wine and fans of organic food prefer to buy a basket of fruit rather than a bottle of wine. But the Caviste Bio has successfully blown away such prejudices and has converted the locals one by one.

Whether you’re just going to pick up a bottle for the weekend or for a full sit-down meal, you will love your experience on this journey of discovery and innovation. Explore new horizons without the unsettling feeling of leaving behind everything you once knew – it’s audacious and perfect.
