Behind Dessance is the vision of culinary art director Philippe Baranès, who has dreamed up and developed the concepts and themes behind some of Paris's most exciting culinary spaces.
With Dessance, Baranès is the first to devote an entire restaurant in Paris to “the sweet”. In the kitchen is Christophe Boucher, an up-and-coming pastry chef who has worked at several three-star restaurants. By now you must be imagining crème brûlée and ice cream, but don't jump to conclusions so soon!
Even though the chef specializes in pastries and sweet is at the center of Baranès's concept, Dessance is not a dessert restaurant. Dessance is a gastronomic restaurant with cuisine that is all about experiencing “the sweet”.


The culinary philosophy of this restaurant is to take the diner on a journey. Several different fixed menus are available.
The boldest among you will try the “formule carte blanche” with four sweet dishes. Those who are less audacious will go for the second fixed menu composed of one salty dish and three sweet ones.
And for the meat-lovers, there is the hedonist menu that takes you on perfectly-curated five-course journey. All that said, it is possible to order à la carte.

Parisianist Fun Fact: At Dessance, a few ingredients that you always thought were salty might take you for surprise and reveal their sweet side.


Whether or not you like the hard stuff, you'll find a beverage that perfectly accompanies your food. The drink menu was designed to create a nice contrast with the dishes.
The teas come from la maison des trois thés (the three-tea house), and are carefully selected to complement what's on your plate. Dessance also makes its very own drinks, including, among other beverages, the infamously healthy kefirs and kombuchas.
The wine list is not very extensive, but privileges quality over quantity. What we're crazy about right now: a demi sec Reisling from Luxembourg's Moselle region. If you're still not sure what to drink, alcohol or otherwise, the pairing menu will steer you in the right direction and guarantee the most harmonious accompaniment to your meal imaginable.


At Dessance, celebrity chefs, neighborhood locals, tourists, and food connoisseurs alike gather together. At night, the ambiance is subdued without being austere, but during the day the atmosphere is much more relaxed.
The dining room is lovely, but we recommend sitting at the impressive stone countertop where you can watch the chefs assemble the dishes right in front of you. Your tasty journey is accompanied by a soothing and eclectic range of music.
The best time to come is between 3 and 5pm, when the chef is more readily available and the service more precise.

The ambiance, the food, and the service lends itself perfectly to a romantic dinner. But if the prices are out of reach, consider going after dinner for dessert.
For the lucky devils who will enjoy the full experience, be warned: a wild ride that stimulates all five senses awaits.
